you won't miss the beef!

1 pound 99% fat free ground turkey
1 16oz Can of crushed or diced no salt added tomatoes
1 small can of smoked chipotle with adobe sauce
3 small jalapenos
1 yellow onion diced
3 medium tomatoes sliced or 6 plum tomatoes
1 tbsp of liquid smoke
1 tbsp chili powder
1 tbsp turmeric
1 tbsp cayenne pepper powder
1 clove og garlic minced
1 handfull of fresh cilantro
Juice of 1 lime
Salt and pepper to taste

Put 1 tbsp of peanut or safflower oil in a non stick sautee pan and brown the turkey. Remove with a slotted spoon to ensure excess fat and oilnare drained. Add the onion to the existing oil left in pan and sautee until translucent. Remove again with slotted spoon and then wipe clean. Add the onion back with the tomatoes (both), peppers, spices, smoke, garlic, chipotle with sauce and liquid smoke and cook through until hot and the peppers are softened. Add the turkey, salt, pepper and lime juice and heat through. Add 3/4 of the cilantro and stir. divide into 5 equal portions and serve with the remaining cilantro. The calories are even lower with 5 servings but still under 400 if you divide into 4. Enjoy!

  • Do you dice up the chili in adobe sauce or do you just dump it in?

    Sounds delicious! Thanks for sharing!
