found a recipe for courgette & carrot soup so whipped up a batch, pretty good & 134 cals per bowl. might try a curried butternut quash soup tomorrow. yummy0

Cut up carrots and onions. Season with salt pepper. Spay baking dish with butter spray Pam. Bake concoction until veggies are soft and starting to carmelize. Crazy good and only like 60 calories for a nice sized portion!0

Ohh, like the sound of that ladybg81, totally into roasted or pan baked veg, will eat them as my main dinner with cottage cheese or houmous.

one of the squash family. not sure if they are specifically a UK type but they are quite versatile, can be stuffed with rice & baked or used in soups or curries.0 -

So I've nearly got through the vegetables.
Made a batch of butternut squash soup, was really good & have frozen 3 batches to use later. And oven roasted the yellow & green peppers with courgette & aubergine to have with lunches next week.
And for dinner today I roasted the parnsips & carrots with a little olive oil in the pan, made a beef stroganoff with the red peppers. Potato & sweet potato mash to accompany & it was a really delish dinner for about 400 cals.
Still got the marrow, really not sure what to do with it. Thinking of stuffing it with a rice, tomato & chilli mix & then baking it in halves. Anyone else tried this?0 -
A box of crushed tomatoes or a few fresh and you could do baked eggplant parm. Is it too hot to have the oven on where you are?0

Great idea with the marrow! I saw a recipe for golden zucchini boats on here recently. You could try that!0
