Hi loves. . so here it is went to costco and of course when you get veggies there you get like this humungus amount. . . .

So what are your favorite things to make with Broccoli, carrots, and artichokes. . . ..

We so rocked the carrots and hummus for lunch. . nom. . . nom. . . . nom. . . .

    Stir-fried veggies (broccoli, carrots, peppers, onions) are my favorite. With brown (or white) rice and lots of garlic. So good. Not sure what to do with the artichokes. I like the jarred kind.. the fresh are scary.

    Broccoli soup - cook your broccoli with a little stock, a potato if you want it thicker, and an onion. Mush it all up in a food processor, add a small portion of creamy blue cheese. Yummeroony.

    Carrot and coriander soup - as above, but add finely chopped coriander, not blue cheese!

    Yes. . the fresh are scary, but I have watched giada cook them a lot, so I am determined to do it. . . The ones that I used all the time that are jarred are the kirkland marinated artichokes. . so good.

    Fresh artichokes are gorgeous. Best, obviously, with hollandaise, but that might be a bit high calorie!

    Steam them. Make a dipping sauce of lemon and a bit of butter with salt, or low fat mayo.

    Pull the leaves off, scrape your teeth across the base of each leaf to draw off the yummy fleshy bits.

    Eat through leaf by leaf till you get to the heart. Peal off anything that looks furry, and then eat the heart also dipped in the same stuff.

    A napolitana sauce (tom, onion, garlic, basil) is also nice with artichoke.
