Got beef???

That would be a resounding no. . I have not eaten it for years. . and now graduated to cutting out all the chicken and turkey. . .
So looking for recipes. . encouragement. . . tricks of what to eat. . . . I have spent years on the borderline. . just eating white meat. . . Now I am not willing to give up my seafood. . . and cheese so I guess they consider me pescatarian. . . lol
All I know is I want to drop the weight and lower my cholesterol. . . So any helpful hints and recipes would be very appreciated. . .
I love animals and don't like the inhumane way that they are treated. . . I heard today . . . that there are more tigers in zoos than in the wild due to HUNTING. . .sad. . .

When I was a vegetarian, many many moons ago, I would put bulgur in my chili and spaghetti sauce to get the texture of ground beef. I also made shepphard's/cottage pie with lentils instead of beef or lamb. Invest in a good slow cooker so you can cook your own beans/legumes. It's not that much cheaper than canned but much less salty. Good luck.0

Oh honey thank you so much. . . I have a slow cooker. . I am not so much craving beef. . just titled it like that to get the attention. . I just want to learn how to cook high protein and healthy dishes that are vegetarian. . My brothers wife is vegetarian. . so to have some nice recipes to use when she visits as well as for me is nice.0 -

I completely agree with Jade, I realize how bad the majority of animals that are raised for slaughter are treated. I am not sure what my excuse is, I don't really eat that much meat and I don't like cheese (except feta *Drools). I always used the excuse that all my loved ones eat the typical american diet and I do a lot of their cooking so I am surrounded by meat. I would love to give it up.
About cholesterol just eating less saturated fat and getting a good amount of soluable fiber helps with that, but i'm sure you already knew that.
I use tvp in place of meat in recipies where it is acceptable. It is also cheaper to buy bagged beans and do it the way julie suggested.

Jade - PCRM's 21 Day Kickstart is starting soon, I think Sept. 1. If you sign up you have access lots of recipes, that are actually vegan. I haven't tried it, but have heard good things about it and signed up this time around just to get the recipes. The book Appetite for Reduction has some good recipes as does The Accidental Vegan. I like The Accidental Vegan because a lot of the recipes are really simple with basic ingredients. I don't really read blogs, but I do like Little House of Veggies - she has some good recipes, varying in difficulty. I especially like her pinto bean recipe, she uses it to make smashed beans for tostados, but I just use her spice combination and throw my beans on to cook and eat them like that rather than mashing them. You can really find great stuff on the web, just google vegetarian or vegan versions of something you feel like making.0
