Absolutely love Thai Food, so after being inspired by Cauliflower Rice on this site, I decided to take a crack at healthy Green Curry.
Calorie count includes the rice. My wife loved it!

A tip on the cauliflower rice: Process it one serving at a time...that way, it won't turn into Cauliflower Couscous. :)

Just had leftovers. Spooned into warm flour tortillas. Of course it bumped the calories up a few hundred, but it sure was tasty.

Just take Cauliflower florets and put in the food processer. I only put enough for a serving at a time. Process until cauliflower is "rice sized" and microwave for 2 or 3 minutes. I found in this recipe, that the cauliflower soaked up the sauce and made me full, like I was eating heavy carbs.
