Thai Green Curry Chicken with PIC

Absolutely love Thai Food, so after being inspired by Cauliflower Rice on this site, I decided to take a crack at healthy Green Curry.
Calorie count includes the rice. My wife loved it!
Serves 4
Ingredients:
Chicken 1lb boneless, skinless, cut in half and in thin strips
Olive Oil, 2 TBSP
Onion, chopped
Red Bell Pepper, chopped
Zucchini, cut lengthwise and into half moon shapes
Garlic, 4 cloves, minced
Fresh Ginger, 2 TBSP, minced
Lite Coconut Milk 13 oz can
Green Curry Paste, 1.5 TBSP
Basil - small handful
1 Lime - juiced
Salt
Crushed Red Pepper
4 cups of Cauliflower Rice - found on this site
1) Add 1 TBSP Olive oil to deep skillet. Seer Chicken for until browned all the way around. Remove Chicken and place on a towel-lined plate.
2) Add another TBSP Olive oil to same deep skillet. Sautee Onion, Zucchini and Red Bell Pepper until onions translucent.
2) Add Garlic and Ginger and sautee for one more minute
3) Add Coconut Milk and Green Curry Paste, and cooked chicken. Stir. Bring to boil then lower to simmer for 10 minutes.
4) Chop Basil. Add Basil, Lime Juice, and Salt and Crushed Red Pepper to taste.
5) Pour mixture onto Cauliflower Rice

A tip on the cauliflower rice: Process it one serving at a time...that way, it won't turn into Cauliflower Couscous.0

Just had leftovers. Spooned into warm flour tortillas. Of course it bumped the calories up a few hundred, but it sure was tasty.0

Just take Cauliflower florets and put in the food processer. I only put enough for a serving at a time. Process until cauliflower is "rice sized" and microwave for 2 or 3 minutes. I found in this recipe, that the cauliflower soaked up the sauce and made me full, like I was eating heavy carbs.0
