how to set your activity level?

I am a waitress at a Big establishment so that means when I work I do A LOT of walking and carrying heavy plates and stacks of dirty dishes. And I know on shifts that are very busy I burn A LOT of calories. But not all shifts are as busy. Nor do they all last as long some are only a few hours. On my days off I would say I am more sedentary I do a little cleaning running errands etc and when I go to the gym on my days off I log it of course. So at first I had my activity level set to active that is what it said to do for people who are waitress but I moved it to slightly active since most days of the week we are kind of slow. And my job isnt making me sweat every day like it can sometimes. How do the rest of you set your activity level at?
