my families chicken casserole i love it and so does the kids

It has such high sodium levels in it i have no clue how to lower it any ideas it is easy to make just cooked chicken breast, stuffing, cream of chicken and cream of mushrooms plus sour cream so any help would be great and any new reciepes that is healthier for casseroles :noway:

    Find "low sodium" cream of chicken, cream of mushroom and sour cream. I'm not sure if there is such a thing as "low sodium" stuffing?

    That sounds tasty!

    Does your grocery store stock organic/natural soups? I find that a lot of the natural soups where I shop tend to have WAY less sodium than the main brands. Or for a cheaper but more time consuming alternative, you could try making your own soups for it and control the amount of sodium that goes into it.

    You might also look into replacing the sour cream with plain greek yogurt, which tastes quite a bit like sour cream but is more nutritious. If that's really expensive in your area (it is pretty pricey where I'm from), then regular plain yogurt could work as well.

    Most of the sodium comes from the soups I believe, they should make low-sodium or sodium free cans of those.

    I use homemade white sauce instead and add lots of seasoning!

    I know that cream of mushroom and cream of chicken come in low sodium varieties (Campbells). I really don't know how much sodium sour cream has in it. I am guessing that a lot of the sodium comes from the stuffing mix. Maybe you can also find some low sodium stuffing.

    You can substitute plain yogurt for sour cream in most recipes, or you could use the low-fat versions of sour cream. I prefer the yogurt, but I'm kooky :)

    Could you only use 1 creamed soup and add a little milk to add back moisture? Or used cubed toasted bread instead of the stuffing cubes and just add back some of your favorite seasonings like cumin, sage and other herbs?

    This is a hard one, my family LOVES casseroles with cremed soups too and they are always outrageous on the stats. You could also increase the amount of chicken and decrease some of the purchased stuffing. Or add some veggies in?

    When all else fails, if a recipe we love is full of something like sodium, I make a half batch instead and we have a healthy side like veggies or salad along side and only 1/2 our normal casserole portion.

    I know I didnt have a solution, but hope this helps :)

    This AND make your own stuffing with bread and spices to greatly reduce the amount of sodium.

    Honestly - if you know of a company called Wildtree (www.wildtree.com) seek out a rep and buy their cream of mushroom soup. I use it constantly.

    You can call the headquarters for a rep closest to you. I do happen to sell it, but I am not pimping my business. I truly just think it's delicious food. It's all natural, soon to be all USDA organic (most already is), they have a line of gluten free, everything is peanut free, blah blah blah *LOL*
