    I have one just like that in my fridge right now. I have plans to cut it up and steam it. I like to put a little garlic powder and some italian herbs on it and chow down. Yummy!!!

    Yumm, slice it up, saute it in a little bit of olive oil with basil and oregano and fresh ground pepper. Maybe mix in some sliced onions and mushrooms.

    Zucchini Lasagna! :happy: Just sub the ground beef for something a bit healthier. Totally yummy.

    Mmmm..I see Stuffed Zucchini...with Ground turkey, onions and bell pepper...yum!!:smile:

    I just had one that large yesterday and made Zucchini soup....little high on the sodium end but with 80 calories and 1 gram of fat per cup (made 8 cups) it was pretty tasty and hubby had 2 bowls of it!!


    Zucchini -chopped fine about 2 cups
    can 14oz of reduced sodium chicken broth...recipe called for 32 oz and this was all I had so I added 2 chicken bouillon cubes plus water
    can fatfree cream of celery soup + 1 can filled with skim milk
    3 chopped green onion stalks
    8 oz can sweet kernel corn
    pepper, minced garlic, garlic salt to season

    You can add a lot of yum veggies to this!!
  • Zucchini boats, cut and hollowed lengthwise, filled with grilled chicken, yellow rice, and your favorite cheese, broiled .
