Low-Fat Slow-Cooker Barbecue

Makes 12-servings
1 lb. extra-lean ground beef
2 cups small-dice celery
1 cup chopped onions
1 Tbsp. whipped butter
2 Tbsp. red wine vinegar
1 Tbsp. brown sugar
3 Tbsp. Worcestershire sauce
1 tsp. salt
1 tsp. yellow prepared mustard
1 cup ketchup
2 cups water
1. Brown ground beef, celery, and onions in a nonstick skillet. Stir frequently to break up clumps.
2. Combine all ingredients in slow cooker.
3. Cover and cook on low 2-3 hours.
4. Serve in sandwich rolls.
Per Serving:
110 calories (45 calories from fat), 5g total fat (2g saturated, 0g trans), 15mg cholesterol, 540mg sodium, 8g total carbohydrate (0.5g fiber, 3g sugar), 8g protein, 6%DV vitamin A, 6%DV vitamin C, 2%DV calcium, 8%DV iron

What's the point of the butter unless you're supposed to use it when sauteing the vegetables, but it seems that you just throw them in with the ground beef. I'm thinking of omitting it.0
