I'm in a rut with my lunches & would like to add some variety to them. I am a SAHM with a 5 and 2 1/2 yr old. They sometimes eat the same as me, sometimes not. What are your favorite lunches?

I like to cut up some chicken and cook it in bulk, then store it in single serving containers. Then it's ready for whatever I want.

    One of my favorite lunches:
    3 large romaine lettuce leaves
    1 oz goat cheese
sliced bell peppers (I like to use orange and yellow for this)
    3oz of cooked chicken
sea salt, pepper, and dill to taste
    1 tsp butter

heat up your chicken, melt the butter. Mix the butter and seasonings into the chicken.

Carefully divide your cheese into 3 portions and carefully spread each portion onto a romaine leaf.

Top with chicken mixture and bell peppers.

Fold romaine leaf in half, and eat like a taco.

    Super yummy!

I like to heat up organic chicken sasuage, and cut into small pieces... toss with fresh spinach. Mix 1 tsp of apple cider vinegar with olive oil, and use a dressing.. toss in a bit of shredded cheese.

I like SWG hemp tortillias, fill with scrambled eggs and cheese (yes I know it's a breakfast dish, but I love eggs for lunch and dinner sometimes too).

Make home made chicken nuggets.. use coconut flour instead of bread crumbs. Sear in olive oil for a few minutes per side, then finish cooking it in the oven. Serve with some organic tomato sauce and brown rice pasta for a mock chicken parmesean.

    God bless!
