Slow Cooker Pulled Chicken

A fall and winter favorite!!

6 raw boneless skinless chicken breasts
1 can diet root beer, birch beer, or Dr. Pepper
Ground Black Pepper
1/2 c ketchup

Cook on low in slow cooker for 6-7 hours. Shred chicken with forks. Cook additional hour. I serve this on a whole wheat kaiser roll with 1 tblsp of BBQ sauce. A great side - fat free refried beans or vegetarian baked beans.

    That is making my mouth water! Do you how many calories etc is in it? Serving size? Etc.
  • I ate it today and figured 6 servings, although you could probably get 8 out of it... with the refried beans it was 403 calories, 60 carbs, 3g of fat, and 38g of protein. I didn't use a lowfat BBQ sauce, so you could cut a little by skipping that or using a lower fat/sugar version. If you skip the roll you're even better off. It's a really good and really easy recipe :-)

    I just had this for dinner with yams and string beans it was wonderful..I used diet dr. pepper...and added a tbsp of minced garlic. I didnt have it over rice or made a sandwich I just ate it alone...I think....not sure......although his plate was empty,....my husband liked it too....

    1/2 cup Ketchup is approx. 60 calories.
    3 oz chicken breast is 90 calories.
    1 Tb Kraft BBQ sauce is 20 calories.

    Add an 80 calorie light hamburger bun and you have dinner for 250 calories. Add some veggies to it!
  • Hey I made this last night using the Dr. Pepper... and used lean pork chops... it was a hit!

    I may be a little more apt to trying to Coca Cola pot roast I read about a while ago in a cookbook now!
