Helping husband meet calorie goals

So, I have been trying to get my husband on board with exercising and eating healthy for a WHILE now. He finally said enough is enough and has started using MFP, watching what he eats, and exercising ~5 times a week. I am so excited for him!

On the days that he works, I make him a lunch to take so that he is eating healthier foods and not spending $. His daily goal is about 800 more than mine, and I am having a hard time coming up with things to send for him. He usually does pretty well with breakfast and will eat whatever I make for dinner, but it's lunch/ snacks that can be hard. His daily goal right now is 2250, so even if he eats a good sized breakfast and dinner, he is left with over 1000 calories to eat throughout the day.

Does anyone have any ideas for good, healthy choices that I can send along with him? He works from 7 am-7 pm, so I try to send enough for a lunch and 2 snacks. Any help would be GREATLY appreciated!
