Lemon Poppy Seed Chicken Casserole
1 can Healthy Request or 98% fat free Cream of Chicken Soup
1 container (8 oz) reduced fat or fat free sour cream
2 tbsp lemon pepper seasoning (or to taste) – OR – Lemon Juice
2 to 3 tbsp Poppy Seeds
2 cooked, cubed boneless chicken breasts. (About 2 to 2 1/2 cups)
1 sleeve Ritz or Townhouse crackers (crushed)
2 to 4 Tbsp melted butter, margarine or butter substitute
Mix first four ingredients in bowl until well blended. Mix in chicken. Place in small casserole
dish (9x9 or smaller). Top with crushed crackers. Melt butter and pour over the crackers.
Top with dusting of poppy seeds (optional).
Place in 400 degree oven for about 20 minutes or until heated through and bubbly.
Serves 4; 456 calories per serving
