My favorite is any flavor of Daiya cheese. I get mine at Whole Foods (cheapest I can find), Wegmans, or MOM's Organics....I use them for my quesadilla, nachos, grilled cheese sandwiches....everything. It's soy-free and is truly vegan (no casein). I've been vegan for a while now and LOVE it!!! And YES, I do get my protein in just fine....

    Good luck.

You can make homemade vegan cheese that is yummy.

1 1/2 cups raw cashews (soaked for 2 hours)
    1/4 to 1 cup water
1 to 2 cloves garlic, finely minced
    1 teaspoon salt
    2 dashes black pepper
1/4 cup nutrtional yeast (you can find this at any health food store)

    Directions:

    1) Place the cashews in a medium sized bowl. Fill water 2" above cashews. Soak for two hours then drain.

    2) Place in a blender or food processor with some, not all, of the water and add the rest of the ingredients. Blend until smooth then scrape into a bowl and cover. The cheeze will set and become firmer by the next day. Then it lasts about a week in the fridge.

I need to try this too! I don't care for cashews much, but might like them this way?

Otherwise, Daiya is awesome. If you have a local natural food store, they probably sell it there.

The health food store will have it......but I will warn you, it tastes NOTHING like real cheese! As long as you expect it to be the most disgusting thing you've ever put in your mouth, you might not be disappointed. I made the mistake of thinking it would be tasty, I've never spit food out of my mouth so quickly!

When I still lived by a Wal-Mart, they sold it there. Now I usually get it at Safeway or QFC (Kroger's). Any natural food market will definitely have it, though.

You can also make a pretty kickass vegan ricotta out of Silken Tofu and nutritional yeast. Just throw it in a food processor with a little salt and pepper. It's great for casseroles.

Also, can't wait to try that cheese recipe! Thanks for sharing it.

Ditto! Did you ever melt it? It's like little pockets of snot dispersed in through your food.

LMAO! EW! No, I just cut off one tiny piece to try it and I couldn't spit it out fast enough! Then I drank 4 beers, brushed my teeth, and licked dirt and still couldn't get the taste out of my mouth. It traumatized my taste buds.
