Not sure what others do with them, but I cook them in a pot of beans. They're mainly used for flavoring other foods, as there truly is not a lot of meat on them.

this thing is huge, it's a cured gammon knuckle, got a ton of meat on it, i googled & the common idea is to boil it then just serve the meat with veg & potatoes. going to do more googling. thanks

Germans cook with pork knuckles all the time, check out recipes for Schweinshaxe. These are slow roasted and served usually with german sauteed potatoes, dumplings or mustard mash.

So I did some more googling, like the german way of cooking in the oven but as I have t go out today didn't have time to boil it before hand, which is recoomended to soften the meat. So hubby seasoned & softened the knuckle overnight & I have just put it in the slow cooker with some celery, onion, garlic, herbs & sweet potato. will slow cook it for 7-8 hrs on high then plan on finishing it off in the oven using the blended juices from the veg, rapeseed oil, beer & a dab of salt to get the crackling nice & crispy. Will post back on how it comes out. (fingers crossed)
