    Pesto Grilled Chicken (homemade pesto, mmm), Balsamic marinated tomato salad (also fresh from the garden!), brown rice and steamed veggies

    Chicken quesadilla...made from crockpot shredded chicken last night. It is awesome!!
  • Take 2-4 chicken breasts & pound them flat. Take one light, creamy swiss laughing cow cheese wedge and spread it on each flattened chicken breast...keeping it in the middle. Take a piece of thick turkey bacon and lay it over the top. Roll it up and fasten it with toothpicks. Put it in a baking dish. Spray it with olive oil. Sprinkle with salt & pepper. Take bread crumbs and lightly sprinkle over the top. I probably only use about 1 tsp per breast. Bake uncovered @ 350 for about 20-30 min, until the center is no longer pink.

    :) My family loves this low-cal faux chicken cardon bleu recipe.

    300-350 cal per roll (approx; depending on chicken breast size)

    cake vodka, ice, fat free vanilla creamer OR vanilla icecream/yogurt, and limeade blended with a very good blender.
