Hello lovely MFPers!

I have just cooked such a divine dinner (sorry, I was too excited and hungry to take photos!)

Just take a tuna steak (mine was a cheapy frozen one from aldi) at 102cals.

Then in a bowl mix together 20g (1/3 cup) of Panko - Japanese style breadcrumbs - I happen to have these, but no reason why you couldn't use normal olde' English style ones! With 10g of egg white and a teaspoon of thai red curry paste (or any curry paste that you like). I used the egg as I was unsure whether it would stick to the fish, but you could probably do without it to be honest.

Smooth that mixture on top of the fish and wrap in foil, bake in the oven at about 200 for 10 mins, then open the oven and unwrap the foil and bake for a further 10 mins, until the breadcrumb mix goes crunchy.

I served with stir fried veg and baby new potatoes. It was sooooo yummy.

With the breadcrumbs, curry paste and egg it came in at about 215 calories.
