HEALTHY SIDE DISH IDEAS?????

GUYS!!! I am in desperate need of your help everyone! I am running out of ideas for healthy side dishes!!! Some one help!!! (Thanks in advance!) :D

    we eat asparagus almost 3 times a week in our house. no complaints yet but i am sure they are coming soon.

  • From the farmers market:

    4 red tomatoes

    3 yellow tomatoes

    2 cucumbers

    2 green peppers

    From Schnucks:

    1 red onion (I only used about a third of a big one)

    1 pint kalamata olives (deli)

    1 container feta cheese (deli)

    1 bottle fat free Greek salad dressing

    2 tablespoons red vinegar

    Salt & pepper

    Chop up everything (except the tomatoes & feta cheese) and mix with the salad dressing & vinegar to marinate overnight.

    About an hour before serving, slice up the tomatoes and mix them in, along with the feta cheese.

    asparagus grilled with olive oil, garlic powder, salt & pepper, and a sprinkle of fresh parmesean cheese.

    sauteed mushrooms

    okra, I have been picking it out of my garden and baking it in the oven with a small amount of olive oil,

    Fresh Corn, and it is in season now

    Red potatoes baked with a little butter, salt & pepper

    I do green beans steamed on the stove top for about 2.5 minutes. I shock them with cold water, dry them out, and add a bit of kosher salt and balsamic vinegar, and refrigerate.

    Cucumber thinly sliced with Greek fat free yogurt or light sour cream; red wine vinegar; and red onions that have soaked in red wine vinegar.

    Halved cherry tomatoes with a little fresh mozzarella, basil, and white balsamic vinegar.

    Julienne carrots, zucchini, and either butternut or yellow squash. Cook them in a sauce pan on low heat with just a smidge of salted butter (carrots need to cook longer), plus a litttle garlic and whatever other herbs you love. Serve it up plain, or mix it in (half and half) with your spaghetti or linguini under a marinara. It's amazingly good, and wonderfully good for you.

    You can smell it, I dont know anyone that sniffs their pee, that would be creepy.
