Frozen spinach

What can I do with frozen spinach? I got carried away at the grocery store - I don't even like cooked greens. Is there any way to make it taste good?

    Or hot spinach and artichoke dip... although I'm not sure how diet friendly that would be.

    I put it in turkey meatloaf, spaghetti, light quiche, light mac and cheese, on pizza, etc....
  • I always look forward to leftover spinach so I can use it in an omelet the next day.

    Have you tried putting just a touch of nutmeg in it just before serving? It gives it a subtle, yummy flavor.

    Frozen spinach on its own doesnt even compare to the taste of fresh spinach (as all frozen veggies) You really need to put it into recipes. If you saute it with some garlic, mushrooms & onion and mix it with a little fat free cream cheese it makes a great wonton stuffer. You put a little scoop in the center of a wonton wrap, fold corners into a triangle, pinch the two outer edges to the shape of a wonton, then put on a cookie sheet sprayed with pan and bake at 425 degrees until golden brown and crispy (about 15-20 min). Also you can stuff mushroom caps (I like that with feta as well, you saute the mushroom stems in with the spinach and save the caps to stuff)...you can top with some parmesean cheese and bake for about 15 min at 350.

    If its fine spinach thats cubed. i put a couple in a drop of hot water in a cup to defrost slightly and add it to everything! spag bol, lasagne, casseroles , curries, anything because it just spreads out and looks like herbs :D xx

    The other suggestions are great! I, personally, like to add it to pasta sauce. And nutmeg is awesome on it!

    I like to throw it in a pan with tomatoes and onions and eat as a side.

    Not exactly calorie-free, but 35 calories per 1/4 cup is way better than the original 180-calories-per-1/4-cup versions, so yay! :happy:

    I threw a few blocks/cubes into a pot of veggie soup today and it was lovely :)
    I usually throw it in with pasta, or else boil it and add some low fat creme cheese and mix it all up, yum!
