I have quite a bit of leftover cooked chicken from last night. I was wondering if anybody has any recipes that uses leftover chicken?

You could make chicken salad or chicken noodle soup or chicken and wild rice soup or make a chicken stir fry

i like to make chicken noodle soup- put a box of chicken stock, carrots, celery, salt, and pepper in a saucepan and cook until the carrots and celery are soft, then add shredded or cubed chicken. chicken burritos are also a favorite in my house- just put cubed or sliced chicken in a pan with some corn and enough salsa to coat everything, and cook until everything is warmed through. great with tortillas, french bread, and tostitos!0

sautee the chicken with veggies, make a green salad or a light chicken salad, chicken fajitas/tacos/etc.. endless posibilities!0 -
sooo many recipes...what kind of chicken? grilled? it doesnt really matter, chicken salad, chicken enchiladas, shred it up and mix with bbq sauce for sandwiches, take pasta, sauce of your choice, some broccoli, mushrooms, etc and throw the chicken in, mix with taco seasoning and make chicken taco salads, make chicken salad sandwiches, put in a wrap with romaine, little cheese, wishbone makes a great low fat caesar and have chicken caesar wraps, put on pizza crust or use flat out wraps for pizza crust with some bbq sauce and onions for bbq chicken pizza, and the list goes on and on and on.0

i'd make 'cheats chicken supreme'. saute onion,mushrooms, red pepper and garlic in a tiny bit of oil, throw in your chicken, peas and sweetcorn with a tin of low fat condensed chicken and mushroom or chicken and white wine soup. Wala chicken supreme. Rice optional. yum yum0

Jambalaya!!!!
2 cups chicken broth with chopped veggies (I used mushrooms, green and red peppers) add parsley, basil, papper, and oregano (cajun seasoning is also awesome). get your veggies slightly soft.
Put 1 cup uncooked rice, chicken, 2 diced tomatoes (I used a can of diced tomatoes with olive oil and garlic) into a casserole. Pour the veggie mix over making sure the rice is covered. Then cover the casserole and bake at 350 for 30-45 minutes or until the rice is done. Yummy Yummy Yummy!!!!0
