Have you got a juicer? Sounds like peeling them to stew would be too difficult.0

Not the best choice but for a once in a while treat we make brown betty with almost turned apples. Use the splenda 1/2 brown sugar, whole wheat flour, smart balace butter spread and cut the topping in half at least (most recipes make waay too much topping anyway). I toss the lemon with the apples (instead of in the syrup and skip the syrup all together). I also add apple pie spices like nutmeg and allspice to the apples before they go in the pan. Super yummy with fat free cool whip. Here's the recipe I use... tweaked a little with more spices to the apples before they are put in the pan.
