What's for dinner?

This is what I made for dinner and it was so good! :)

Black bean and roasted corn tacos

Archer Farms - Salsa, Corn, Black Bean and Roasted Pepper, 1 container
Beef - Ground, 80% lean meat / 20% fat, raw (hamburger), 9 ounce
Kroger - Low Moisture Part Skim Mozzarella Cheese - Shredded,
Mission - Artisan Flaxseed & Blue Corn Blend Tortillas, 6 (36g)

Brown Hamburger-drain off grease
Add the jar of salsa-mix and heat
warm tortilla on each side for about 20 seconds each in dry frying pan
put 1/6 of mixture of tortilla and a little sprinkle of cheese on top


Calories Carbs Fat Protein Sodium
Per Serving: 278 25 14 889

I had one of these and a small salad and was full.

What did everyone else have??

    Omlet with mushrooms, salsa and low fat mozerella

    I was kinda lazy lol.

    Med/large potato wrapped in plastic and nuked for 8 min. I mashed it with some pepper, no salt, worcestershire sauce, lite smart balance, and water. I also had 5 veggie meatballs covered in ketchup and half a can of spaghetti loops

    What can I say? I go back to college in a few days XD

    Once I start adjusting to my new appts, I've definitely got to make something like this. Although, I'm not a big fan of corn(unless it's on the cob or in certain things) Maybe some 10 min brown rice with black beans and avocado(or guac)? Mmmm....

    That would definitely lower the sodium too. :) I bought this salsa from target and they have a ton more different kinds too..so you have that option as well. :)
