Honestly, no. If I'm going to have carbonara then I want to have 'proper' carbonara (and for that reason I don't have it that often, but when I do I reaaallly enjoy it!!)

    For each person I use:

    1 whole egg & 1 egg white
    1tbsp grated parmesan
    1tbsp double cream

and about 80g spaghetti, plus bacon/lardons.

It's definitely not the healthiest recipe out there, but oh my goodness, so tasty!

Have a lovely recipe for this from the luscious low fat cookbook but i've replaced ricotta cheese with quark to make it even more virtuous...

    serves 3

    50ml skimmed milk
    1 small egg
    2 tablespoons quark
    1 tbs parmesan
    seasonings of your choice

whisk everything together and add to cooked pasta before serving!

221 kcals and 3.4g fat per serviing

    enjoy!

Have you tried subbing cream for unsweetened almond milk. It's pretty creamy. I love making carbonara but haven't since I've been calorie counting. I wanna try tho with this sub.
