Thai Grilled Salmon - Serves 2
2 Salmon Fillets
Marinade:
0.5 Red Chilli, finely chopped
1 Garlic Clove, finely chopped
0.5 tbsp Fish Sauce
0.5 tbsp Sesame Oil
1 tbsp Clear Honey
Handful of Chopped Coriander
Pinch of Ground Black Pepper
Garnish:
Chopped Cucumber (a piece about a couple of inches long)
2 Spring Onions, finely sliced
Served with:
100g Boiled Rice
2 tbsp Sweet Chilli Dipping Sauce
Method:
Marinate the Salmon in the chilli, garlic, fish sauce, sesame oil, honey and coriander in the fridge for at least 30 mins or overnight. Cook under a grill for approx 15 mins or until cooked all the way through, the honey will make the edges go all crispy. Serve with white boiled rice and chilli dipping sauce, sprinkle the salmon with the cucumber and spring onions.
Approx 570 Calories per serving (probably less because you wont end up eating all of the marinate.)0 -
my mom just puts the filet on a dish, with a few slices of ginger on top. it steams for about half an hour, and she drizzles a bit of oyster sauce over it. i'm super picky when it comes to fish, but mama gets me every time .0

I made something similar the other day.
2 salmon fillets
1 thumb sized piece of ginger
2 chillis
1 tbsp thai curry paste
1 bunch coriander (Cilantro)
1 beaten egg
Whiz the lot together and leave to set in the fridge for 1-2 hours. Remove and form into patties and cook in a non-stick pan with a little oil for about 3 mins either side.
I ate mine with a cucumber salad, dressed with lime juice/ coriander & chilli and sprinkled with crushed roasted peanuts,.0
