LEMON & GARLIC ROASTED SALMON WITH ROASTED TOMATOES

Serves 4
Ingredients:
1 tsp lemon juice
4 dollops* Hellmann's Light Mayonnaise
1 tsp crushed garlic
4 salmon fillets
250g cherry tomatoes
*A dollop is one level tablespoon of Hellmann's mayonnaise (15ml)
Preparation
1. Mix together the lemon juice, mayonnaise and garlic.
2. Drizzle over the salmon fillets and tomatoes.
3. Bake at 170°C for 15 minutes.
4. Serving suggestion: Serve with wholegrain rice and a side salad.

Calories (kcal) 269, Sugars (g) 2.2, Fat (g) 17.4, Saturated Fat (g) 2.7, Salt (g) 0.4
