Help me eat more....?

Okay....So, apparently I don't eat enough... I never, ever thought I would say that.... But most days, I have problems getting to 1000 cals, let alone 1200. I am diabetic, so I eat low carb. That paired with staying away from high sodium foods and drinking water like it's my job has me having a very difficult time getting enough good calories in.
Can you wonderful people please help me figure out how to eat more cals (get closer to 1200) without going nuts on the carbs and sodium??? I'm feeling really crappy about the awesome burn I had yesterday and the effing scale going UP this morning....

You probably need to eat more than 1200 calories. I know doesn't make sense...eat more and lose weight. I found out I wasn't eating enough and 1200 calories is not near enough for me. I would be so hungry. On the days I work out I even eat more sometimes...when I eat a few of the exercise calories back.
I would at least up it another 100 calories to 1300 or even 1400. Try it for a week and see if you lose.

try including some higher calorie foods in your diet that you only need a small portion of - these include things like nuts (almonds for protein) and avocado because they contain healthy fats but are high calorie in small amounts0

Dairy might be a good choice. Some milk or maybe cottage cheese (not sure of the sodium). I usually turn to eggs when I need some additional calories.0

im having that same problem i dont reach 1000 calories some days either because i dont do breakfast and a healthy lunch and dinner adds up to about 800 calories its soo hard to hit target and i never thought id say that0

I also have the problem of not eating enough, so instead of adding more to a meal I try to add 1 or 2 more snacks in a day. I like tuna fish or turkey lunch meat wrapped in lettuce with a little avocado, a stick of string cheese, I once had this low carb recipe for quiches with veggies in it that was so good even my husband liked it!
-As for the scale going up, maybe your just retaining water? I try not to weigh myself everyday, I shoot for just once a week. Like you said, you felt an awesome burn yesterday.. try focusing on that. If you feel good and you know your healthy those are both great rewards and the numbers will all come off eventually. Eat more calorically dense foods, and if you can't get your cal in liquid form. so things like nuts, peanut butter, pasta, whole milk, protein shakes etc0
