Does anyone here have any experience cooking with coconut flour? I am thinking about trying this and wondered what peoples success rates were.

I use it for baking like Paleo blueberry muffins and such. It is awesome and very, very filling.

My hubby uses it, along with other flours, to make homemade pizza crusts. I haven't cooked with it but I love the taste and texture of the crust. I'm sure there are tons of recipes out there and also sites that advise on substituting it for reg. flour! Good luck!

why do you need coconut flour? If you are trying to go the gluten free baking route, you are treading a dark and dangerous line. Trust me on this one.
the only thing it's really good for is in conjunction with almond flour for breading chicken and stuff, otherwise it's blech!

Kerri, how funny to see you asking about this. I am trying to figure out how best to add home made bread back to my diet because frankly I miss it. I have made some truly awful low carb breads over the years but thew one thing that never crossed my path was coconut flour. But while researching how to freeze and thaw bread dough so I can make tiny little one sandwich loafs I saw someone ask if it worked with coconut flour. They didn't get an answer but it sure has spawned a large search for me today.

I am wondering if subbing one cup of coconut flour in with some extra gluten and fat would work ok. I am very fortunate to not have a problem with gluten but I still can only do so much grain and carbs.

I think I'll pick up some of this for use after my current batch of frozen dough is done.
