Can anyone help me? I need a good recipe for a chicken merinade!!!!

    I like this marinade with a side of rice, chick peas, zucchini, on a pita... just by itself! It's fresh and Mediterranean inspired.

    Mash fresh garlic glove.
    Kosher salt.
    Black Pepper.
    Dried Oregano. (Just a tad it's pretty strong)
    Zest of 1 medium lemon.
    Half the juice of the lemon.
    Some fresh chopped parsley.
    Some extra virgin to coat lightly.

    When it's cooked you can top it off with the rest of the lemon juice.

    I splash a bit of lemon juice, some soy sauce, garlic and a tiny bit of olive oil.

    Marinade for baked/grilled chicken satay (Malaysian)

    Cut chicken into chunks or strips

    2 tsp soy sauce
    1 tbsp crunchy peanut butter
    1/2 tsp ground turmeric
    2 chopped fresh chillis
    1 fat clove crushed garlic
    juice of 1/2 a lime

    marinade for at least 2-3 hours (overnight if possible) and then thread onto soaked wooden skewers and cook.

    BBQ

    Tomato ketchup (10 tablespoons)
    Honey (5-6 tablespoons)
    Virgin Olive oil (7-10 tablespoons)
    Garlic Puree (1 teaspoon)
    Rice wine vinegar (1tabl spoon to cut through the chicken)
    Tabasco (to taste)

    Zap it all in a blender, add marinade & chicken breasts in a zip lock bag for 24 hrs, making sure to squidge it around regularly, then grill for 10-15 mins till chicken is cooked.

    This is my favorite marinade for poached salmon but it works well for chicken, too:

    1/2 cup soy sauce

    1/2 cup rice vinegar

    3 Tbs brown sugar

    1 tsp sesame oil

    2 green onions, sliced

    a few dashes of Tabasco sauce


    [If I am poaching salmon, I generally just poach it in this marinade -- yum! I don't really care for poached chicken, so if I use this marinade on chicken, I typically will grill it.]
