My favorite breakfast :)
1/2 cup egg whites (Kroger, Break-free, doesn't matter)
1/4 cup chopped red peppers
1/4 cup chopped mushrooms
1/4 cup shredded baby spinach
1 flatout light sundried tomato wrap (or whatever flavor you want, the light spinach is really good too!)
So I have one of those little circular egg sandwich makers but you can easily use a bowl instead. Spray bowl with non-stick spray. Layer the spinach, peppers and mushrooms on the bottom of the bowl then CAREFULLY pour egg whites on top. Microwave for about 2 1/2 minutes (or until egg whites are set) then let cool a little bit (it's going to be SUPER hot). Lightly toast the flatout wrap, slide the mini omelet into the center and wrap up. Enjoy!!!!

That sounds awesome. If only I had more motivation and/or time to make delicious breakfasts like this one! Of course, if I made it, I would be sprinkling a healthy dose of tabasco or cholula sauce all over it to give it a kick (who doesn't like hot sauce at 7:30am!!) which would be added sodium, but mmm.0
