My favorite breakfast :)

1/2 cup egg whites (Kroger, Break-free, doesn't matter)
1/4 cup chopped red peppers
1/4 cup chopped mushrooms
1/4 cup shredded baby spinach
1 flatout light sundried tomato wrap (or whatever flavor you want, the light spinach is really good too!)

So I have one of those little circular egg sandwich makers but you can easily use a bowl instead. Spray bowl with non-stick spray. Layer the spinach, peppers and mushrooms on the bottom of the bowl then CAREFULLY pour egg whites on top. Microwave for about 2 1/2 minutes (or until egg whites are set) then let cool a little bit (it's going to be SUPER hot). Lightly toast the flatout wrap, slide the mini omelet into the center and wrap up. Enjoy!!!!

    Little high on the sodium but otherwise it sounds fantastic!! The sodium is probably in the wrap.

    That sounds awesome. If only I had more motivation and/or time to make delicious breakfasts like this one! Of course, if I made it, I would be sprinkling a healthy dose of tabasco or cholula sauce all over it to give it a kick (who doesn't like hot sauce at 7:30am!!) which would be added sodium, but mmm.
