my favorite breakfast--REVISED
Literally the day after I posted the other topic about my favorite breakfast, I decided to change it up a bit--and now I have to post it because it's SO. MUCH. BETTER. than the other one. Warning: it DOES have high sodium.
1/2 cup egg beaters southwestern style (gives it a nice spicy kick)
1/4 cup (or less) baby spinach
1/4 cup broccoli, red pepper, and mushrooms chopped into TINY pieces
1/2 wedge laughing cow light creamy swiss
1 flatout light sundried tomato wrap
Spray small bowl with non-stick spray. Layer spinach, mushrooms, broccoli, and pepper in bottom of bowl. Carefully pour egg beaters on top and use a fork to completely cover vegetables in egg. Microwave for about 2 minutes (until egg sets). Spread the swiss in a circle in the very center of the wrap, toast lightly (so the wrap doesn't disintegrate). Slide mini omelet on top of warmed cheese and fold up ))) IT'S ABSOLUTELY DELICIOUS!!!!
Note: sometimes the non-stick spray means there's bit of liquid at the bottom of the bowl after microwaving and if you pour that onto the wrap as well, it makes the wrap soggy. I just slide the omelet first onto a paper towel and pat it dry, then onto the wrap.

Sodium: 791 (the egg beaters have 360g per 1/2 cup, and the wrap has 320g, my apologies )
If the sodium's not a problem for you, THIS IS THE BEST BREAKFAST EVER. If it is, you can reduce the egg beater to 1/4 cup, or cut out the cheese, or sandwich the omelet on a light whole wheat english muffin or something similar. Enjoy
