1 Box Barilla Piccolina Bow Tie Pasta
3 Tbs Extra Virgin Olive Oil
1 Carton Grape or Cherry Tomatoes
1 Bag Fresh Baby Spinach
1 Cup Finely Shredded Italian Blend Cheese
Topping
2 Tbs Parmesan Grated Cheese
Boil pasta to desired texture. Drain. Heat 2bs olive oil on high heat and add tomatoes. Cook tomatoes until blistered. Return drained pasta to pot and medium heat. Add remaining ingredients. Stir over low-medium heat just until spinach wilts. Top with parmesan cheese and enjoy!

I do something similar with bowties but instead of blistering the tomatoes I just halve them and add them with the spinach. Instead I add shrimp (seasoned with salt and pepper) to saute in garlic with the olive oil. The heat from the pasta and shrimp wilts the spinach just perfectly and warms the tomatoes. Then I top it with crumbled goat cheese..... Creamy, tangy, sweet, PERFECT dinner!!0
