Looking for stories from those who were successful on this diet. Typically, what did you food diary look like?

    Its not so much A diet as opposed to MY diet due to lifestyle changes and intolerance, but feel free to check out my diary!

    Eating all processed "gluten free" foods will not be helpful or beneficial.

    I am not sure how to answer your question... for those of us with sensitivity or celiac, ingesting gluten can be, at best, uncomfortable, and at worst, life-threatening. So - please perhaps there is another way to phrase your question???

    Yes, I know it's not a "diet" as such as it is a lifestyle or way of eating when you are allergic to gluten. However, the reason for me asking the question is because some people do this way of eating as a "lifestyle change" not because they can't ingest gluten. I know of someone recently who hast lost over 50 pounds so I was mainly asking if anyone had any success stories by following this way of eating. And what does your food diary look like?

    AHA! Tahnks for getting back to me! Well - all I can say is that the person who lost that huge amount of weight must have given up lots more unhealthy foods than just gluten!!! There are many GF foods that are available to us these days, and they have just as many calories as the original versions. Just avoiding gluten doesn't mean you will have a low-calorie diet. For me - I have been lacto-ovo vegetatrian for about 19 years, so my food choices are vegetables, fruits, beans, GF breads, low fat cheeses, almonds.

    The primary difference between a gluten free diet and an eat-whatever-you-want diet is that on a gluten free diet, you won't eat anything with wheat, barley, things like that. You stay away from bread (unless you can find a gluten-free kind, but really, you might as well pick something healthier anyway), pasta (although rice noodles are okay), breakfast cereals (excluding those that are rice or corn flour based), and I think a lot of people with Celiac disease/gluten intolerance stay away from steel cut oats (right?). This also means that 99.9% of the cakes/cookies/whatever available in stores or in restaurants are off-limits. I think that's why people assume a gluten-free diet means instant weight loss - obviously if you're cutting out stuff that isn't that good for you, of COURSE you're going to lose weight. It'll happen ANY time you remove unhealthy things from your diet.

    So, to answer your question: my guess would be that the typical "healthy" food diary of someone who doesn't eat gluten includes a healthy ratio of protein, dairy, fruits and vegetables. This is, in my opinion, what a healthy diet for someone who *does* ingest gluten would look like too.
