What to serve with a frittata

Hey again!

I am making a spinach and potato frittata for dinner. Its only 176 calories per serving. I was wondering if you had any ideas of what to serve with it? Its for dinner so I dont want fruit like I would normally serve for bfast.

  • A nice light arugula salad with a lemon dijon vinegrette?
  • Roasted potatoes or a baked sweet potato would be good.

    So its not really healthy but anytime my MIL makes one she serves biscuits with it

    How bout some sautee red/green bell peppers with Shiitake or Portabello mushrooms in a light butter/garlic sauce? You could also maybe do long green beens with fire roasted to or sun dried tomatoes.

    Mmmm I love frittata. I always love to pair it with some type of salad that has a vinaigrette. Balsamic is really easy to make too; just add some oil, balsamic, salt, pepper, garlic (optional), and a little bit of some sugar and you've got yourself a simple tasty dressing. If you wanna go a lil more French, then add some Dijon to the dressing - it's FABULOUS! haha
