Chicken invention :)

I just came up with this and it tastes great:

1 can of chicken
1 onion
2 ounces of cream cheese
2 tablespoons of ranch dressing
2 slices of whole grain bread

Cut the onion in thin strips, cook until tender in 1 tablespoon of olive oil in a non-stick pan. Add drained canned chicken and spices. Cook until a little brown. You may add water from time to time if it gets too dry. Add the cream cheese and ranch dressing until they melt. Serve as a spread on toast.

Makes 4 servings, 154 calories each. Add the toast calories and it's 254 calories/serving.
Total 615 calories just for the spread.

    Did you count the Olive Oil in your calories? Its not listed as an ingredient and probably has more calories than anything on your list of ingredients.

    Oops. I only used one tablespoon. It will add up 119 calories to the mix. Making each serving at 184 calories. This is for the mix only, not the bread as well. But I guess bread can be replaced with crackers. Oh, or maybe stuff portobello mushrooms and bake...
