This is a Hungry Girl Recipe. We had these for breakfast this morning with the Santa Fe Frittata that I'm going to add right after this. Good enough to serve to people who aren't watching their calories
Peachy Keen Pumpkin Oatmeal Muffins
1 1/4 Cups regular oats
3/4 Cup Bisquick Heart Smart Baking Mix
1 Cup Skim Milk
1/2 Cup Egg Beaters
1/3 Cup Canned Pumpkin
1 Cup Canned Peaches in juice or water drained and chopped
1/4 Cup Splenda
2 tsp Pumpkin Pie Spice
1/4 tsp. salt
Directions: Preheat oven to 400 degrees. Combine all ingredients in a large bowl and stir well. Spoon mixture into 12 muffin tins sprayed well with nonstick cooking spray. Bake muffins for 20 minutes, or until muffins have puffed up and tops are firm and golden. Allow to cool before removing from muffin tin.
1 muffin = 80 cal, 1 g fat, 160 mg sodium, 14 g carbs, 1.5 g fiber, 3 g sugars, 3.5 g protein
