I cannot eat gluten either. Try making a batch of homemade chili for the week. Large can of V8, stewed tomatoes, kidney beans, lean beef, and onions. No noodles.0

I just want you to know that I tried the chili tonight and really like it. I made enough to freeze some and have plenty for the upcoming week. I also went to the store last night and found ingredients for additional gluten free foods such as bread and cereal.

I'm glad you liked it. You can jazz it up to your taste...hot peppers, more onions, gluten free noodles, whatever you like.
Some other lunches I enjoy are tuna melt without the bun (tuna, lite mayo, onion, cheese...micro for 1 minute) gluten free cornflakes with a banana, and hard boiled eggs and fruit.
How long have you been eating gluten free? What are your symptoms if you eat gluten?
I have two daughters, and all three of us are GF with slightly different symptoms, ranging from skin rashes, headaches, bowel problems, joint problems, and eye problems. Without gluten...no problems.
Let me know if there is anything I can share with you to help. I've been eathing this way for 3 1/2 years.0 -
I have been GF for about six years. Actually, if you like cooking, once you have your pantry stocked, doing gluten-free is not that hard. The trick is finding the 'hidden' gluten (all kinds of things have modified food starch in them). If you have a good health food store nearby, they carry all kinds of GF flours (rice, tapioca, buckwheat, potato,etc) that you can substitute in your regular recipes. You may find it difficult subsituting GF for wheat flour when you try baking regular recipes for breads or cookies, but, hey, we're dieting aren't we? (brownies are much easier :laugh: .) Even the health food /organic section of your local may have some GF pasta, cereals, cookies etc. Tinkyada, DeBoles, Ancient Harvest make good pasta, Envirokidz , Arrowhead Mills make some good GF cereals that you can buy most anywhere. You can also check out GlutenFree Pantry - they have some great mixes for breads and cakes. Some chain restaurants, like Outback and Carraba's have gluten-free menus too. Good luck.0

theres something out there called Cream Of Rice its really good i love it better then cream of wheat and its gluten free and you can make anything out of it.0

I'm not on a GF diet, but I did see these GF recipes while browsing around on Whole Foods' website. There are 880 GF recipes. Hope they help y'all out! :flowerforyou:

Wow! Thanks for all the help. This is a new diet for me. My symptoms include stomach, esophagus and throat problems. I have muscles aches as well but was not aware that gluten could be the problem. I'll check out the whole food website and get to the market!0

I am going to be mean but:....If you want to lose weight and you want to be GF just eat everything and anything unprocessed. Veggies, fruits, meats, rice....thats it . Only grocery shop on the outer limits of the store and bamm...we would be skinny
So easy to say and not so easy to do. I have been GF for almost 6 yrs (and need to lose a ton) but the problem happens when I start buying or making GF products llike cookies, brownies etc etc. I mean the stuff is expensive and not always the easiest to make. So I end up eating the whole thing in 1 sitting. Plus us older diagnosed GF'ers took so long to get diagnosed our metabolisms are so wacked that losing 1 pound is very hard since our bodies hold onto everything now..
There are a ton of books now (there was even a "dummies" book). Grocery stores like Whole Foods, Earth Fare have cooking classes and carry a ton of our stuff. I like reading karinas blog (glutenfreegoddess.blogspot.com) . Other then that I find the low carb diets and books work well since they leave out alot of pastas/breads etc. I can replace bread with corn tortillas or I use a Van waffle (only 1) or I wrap in lettuce leaves. Debole (?) pasta has made a "whole" grain of our pasta (i saw it at Earth Fare).
My set back really is wine and beer (damm that Redbridge and New Grist beer for showing up). So good luck. Its very hard to be GF completely0 -

I recently found out that I have celiac disease. I started to try to lose weight (after getting sick over a year ago)... the weight was coming off easily... turned out to be due to celiac. Since going gluten-free my weight loss stopped. Going gluten free has been the best thing I ever did - health wise. I never have felt better. I didn't know I could feel this good. I always had a stomach ache, I felt tired which made me crabby. It was a vicious cycle. But now I'm going on 4 months with a gluten free diet - it's been great but the weight GAIN has not. I put on 10 lbs in 4 months. I know I have to get this figured out our else I'll be in big trouble. I have 40 lbs to lose to be "normal weight" in the doctors book. So I'm on a mission as well to eat healthy and gluten free. It's hard to find yummy easy recipes with this type of diet though. Anyone else notice this? I've been eatting a lot of mexican dishes because they are easy to avoid gluten.
I was so excited when I seen this post because I'm looking for healthy dishes to make for dinner now. Thank you for posting this and for the link to the 800 recipes! That rocks!!0 -
I have only been on the gluen free diet for approximately 1 week and I have to say that I already feel better. I feel less tired and much more clear-headed. I'm glad to hear that Mexican dishes tend to have less gluten but hope that weight loss isn't more difficult!!0

Just try not to replace gluten foods with the gluten free version. Try veggies instead. For example, try spaghetti sauce over broccoli. It's delicious and it makes it easier to eat healthy and GF.0

I replaced the gluten foods with gluten free foods - which turn out to be more calories and less fiber.
It's a learning process... trial and error... right?0 -

People ask me 'Isn't it hard to grocery shop?" and the answer is 'no, you don't have to go down the aisles!) And it really is true, you tend to eat very little processed food on GF diets. So you get your produce, your meats and eggs and dairy and you're pretty much done. And it was a good comment about trying not to simply replace gluten foods with GF versions; they are often higher in fats and sugar, lower in fiber, so not the best from dieting standpoint. So be creative. Use a romaine leaf to make a sandwich wrap instead of GF bread or a tortilla (oops, you already said that!) , or just substitute a chicken caesar salad instead of chicken sandwich, use friuts and veggies for snacks0 -

I actually popped on this thread with a friend in mind but now see how so many of you shared..don't subsitute, just keep it healthy and wheat free without the added fats/cals.

I have a pretty high gluten intolerance, and went completely gluten free at the start of last year.. after a while I let it slip and have been eating gluten a couple of times a week and the difference (for me) is huge! Am jumping back on the band wagon again this year and hopefuly sticking to it.. its amazing the energy you have, and the happier I felt gluten free!
I found omelettes to be really handy, you can put anything in them.. even leftover curry etc!
Does anyone have any fast and filling gluten free breakfasts? I have rice bubbles nearly every morning but would love a change.. !0 -

I love this make ahead for the week quiches: (from South Beach idea)
Preheat 350
Line cupcake pan with cupcake liners
Beat 12 eggs (you can play around with egg whites to be healthier), add Mrs Dash if you would like
Cut up candian bacon and place bottom of each muffin (you can do any healthy meat or omit this)
Cut up a veggie (broccoli, peppers,spinach, whatever) and place in muffin
Cut up Fat free cheese and place in muffins
Pour eggs into each muffin.
bake about 30-45 mins. Eat 2 a day, and warm them up in microwave. A muffin pan should make 120 -
