This is a good, easy to make Slaw without dairy!


Toasted Sesame Slaw

3 Cups "Fresh Express" Coleslaw Mixture
1/2 Purple Onion - Chopped
1 Medium Carrot - sliced into small bits
3 Tablespoons Dark Sesame Oil
6 Tablespoons Rice Vinegar
2 Teaspoon Dijon Mustard - no salt added
3 Tablespoons White Sesame Seeds
1/4 cup Dry Roasted, Unsalted Peanuts
1 Teaspoon Sea Salt

Combine Slaw mixture, carrot, and onion in large bowl. In a separate, small bowl, combine oil, vinegar, mustard and salt. Mix well with fork. Pour dressing over slaw mixture and toss well to coat. Refrigerate for 30 minutes.

Before serving - toast sesame seeds. Place seeds in heavy skillet over med-high heat. Let sit for 30 seconds until they start to brown a small bit - then shake skillet to get seeds evenly toasted until a light brown color. Remove from heat and let cool.

Chop peanuts.

Add sesame seeds and peanuts to slaw right before serving and toss well.

Enjoy! Makes 6 servings.
