School Lunch!

School is more hectic than ever this year! What are some quick reciepes that you like to make for school, if you are still in it. Lately, I've been packing the Starkist Tuna Lunch kits (unfortunately, they contain incredible amounts of sodium), and Turkey Sandwiches on whole wheat sandwich thins. Then I usually pack grapes, strawberries or any other fruits and Special K Cracker Chips, or Pretzel Crisps, or a Special K Bar for a snack. I know I can't pack sandwiches and tuna kits for the rest of the school year, so what lunch ideas do you suggest?

  • cook chicken breasts the night before and have that at lunch.

    turkey/cheese/lettuce roll ups.
    chicken salad.
    pita sandwiches
    turkey burgers with sandwich thins or whole wheat english muffins.
    thermos with soup in it.
  • I struggled with this too. What I ended up doing was making a couple carb smart salads (since I am watching carbs) at the beginning of the week. Salads usually make a fairly big amount, but then I portioned them out for a week or two in individual containers. Then I alternated the two different salads and threw in a sandwich here and there. It gave me variety ... plus I didn't have to make my lunch every night/day; it was already made. I just packed it in a bag and off I went.
