Protein pancakes

4 eggs whites
1/2 cup quick oatmeal
1/2 cup fat free cottage cheese
1 tsp. vanilla
1 tsp. cinnamon

Whirl it all in a blender & cook like regular pancakes. I make 3 fairly large pancakes and they are all mine.
The whole batch works out for me at: 293 cal/3.2 gm fat/32.4 gm protein/35 carbs

I have added shredded zucchini before, but they need a little tweaking...maybe a bit more oatmeal?? They didn't set up as well. Not so bad that I still didn't eat them tho!!

    I wonder if you could add other vegetables--say spinach or squash or something?
  • The only other thing I have done so far is to put blueberries into the batter. I sometimes put fresh strawberries on top, have done bananas a couple of times...applesauce is also a good "syrup" :) I'm sort of addicted to these right now, and have them at least 3 times a week!
