Carrot & Zuchinni muffins - for a treat!

Dry ingredients
Plain (all purpose) flour 1 1/4 cups
1/2 tbsp baking powder
1/4 tsp bicarb of soda
1/2 tsp fine salt
1/2 tbsp cinnamon
1 cup raisins/sultanas

Wet ingredients
2 eggs, beaten
1/2 cup vegetable oil
3/4 cup dark muscavado sugar (dark packed sugar)
1/4 buttermilk (or 1.5% low fat yogurt)
2 tsp vanilla extract
1/2 half cup shredded carrot & 1/2 cup shredded zuchinni (about one of each vegetable)

1. Mix all the dry ingredients together
2. Mix all the wet ingredients together
3. Add the wet to the dry and mix until combined.
4. Divide into 12 muffin cups
5. Bake at 180C for 20 minutes
Makes 12
