I'm cooking Rosh Hashanah dinner for my family this year - it will be my first time making brisket, kugel, and latkes from scratch! I was just wondering if anyone has any good recipes? Ideally I'm trying to find a crockpot brisket recipe . Thanks!

I'll send you whatever good stuff I find. Surprisingly, Martha Stewart has some really good recipes on her site. I believe I used her round honey and apple Challah last year for Rosh Hashanah. Best. Challah. Ever. (and that is really saying something).1 -

Pineapple/zucchini fritters, pineapple-upside down kugel, carrot kugel, sweet potato pie,brisket -ofcourse, lotsa yummy desserts too.

I have a very good 100% whole wheat challah recipe that's very easy (you make the dough in a bread machine).

650 g whole wheat flour (or 4 cups, but I prefer to use weight )
1/4 c sugar
2 tsp salt
2 tbsp wheat gluten (I use Arrowhead MIlls) -- This keeps the challah from becoming like a brick.
1 tbsp bread machine yeast
1 c water
1/2 c oil
2 eggs + 1 egg for coating
1. Warm the water in the microwave (I do 40 seconds)
2. Warm the eggs in a container of warm/hot tap water
3. Put all wet ingredients into bread machine
4. Put in dry indredients, but yeast should be last
5. Run bread cycle
6. Turn on oven at 200
6. Form the challahs (I make three smallish loaves in oval pans -- braiding is too much work)
7. Spray with Pam and cover with saran wrap and leave on top of stove (not directly in live of hot air blast from oven).
8. Allow to rise for 1 hour (the warmth from the oven is a big help)
9. Beat egg and brush on.
10. Add toppings as desired (poppy, sesame, etc.)
11. Bake (Time will vary based on your oven, but I do 21 minutes on 355/convection).
People who eat my challah cannot believe it's 100% whole wheat.0 -

Pineapple Fritters
10 slices freshly cored pineapple
(i use 1 16oz can pineapple rings)
batter:
2 eggs
3 Tbs water
1/2 c flour
1 tsp baking powder
pinch salt
1 Tbs sugar
oil for frying
~ pat pineapple slices dry
~ to prepare batter: mix liquid ingredients in large bowl. combine flour, baking powder, salt and sugar. add to bowl mixing until smooth and creamy.
~ heat oil in frying pan until very hot.
dip pineapple into batter to coat both sides
~ fry over MEDIUM flame (approx 1 min each side)
*same batter can be used with apples
** to make zucchini fritters:
cut unpeeled zuchhini into 1/4" slices and fry 2-3 min per side
in batter: omit sugar, add 1/2 tsp salt, and pepper to taste.
YUMMY!

Carrot Kugel
less than 1 C oil
3/4 c brown sugar
1 t salt
1 T cold water
1 T lemon juice
1 t vanilla
2 eggs
1/2 t baking powder
1/2 t baking soda
1 1/4 c flour
1 can sliced or whole carrots - mashed with a fork
cream the sugar, eggs and oil.
add rest of the ingredients, alternating wet and dry.
mix until its an even consistency.
bake on 350 for 40 minutes (edges should be golden)
FYI: I do NOT eat cooked carrots. I eat pretty much every other food except that.

Try adding grated veggies to the latkes and bake~ don't fry them. Spray a little olive oil over them before baking. Save calories and add complex carbs and fiber. My family loved them this way last year.0

This is my favorite "go to" dessert when I'm short on time.
Prep time is under 5 min, and no mixer!
Warm "gooey" chocolate cupcakes
3/4 c chocolate chips
1 stick margarine
melt. cool.
then add:
2 eggs
3/4 c sugar
3 T flour
Spray 12 cupcake holders with non-stick spray.
Divide mixture into cupcake holders.
Into each one, put 1 square Rosemary chocolate (or your favorite chocolate).
Push down the chocolate so the batter covers it.
Bake at 400 for 20 min
Heat to serve.
serve with a scoop of vanilla or vanilla fudge icecream
(i drizzle the plate with raspberry decorative syrup, makes an excellent presentation!)0 -
Pineapple upside-down kugel
8 oz medium egg noodles
3 Tbs margarine, melted
6 eggs, beaten
3/4 c sugar
1 tsp lemon juice
1 can pineapple slices
1 cup pineapple juice (drained from can)
maraschino cherries
1/2 c brown sugar
cook noodles according to pkg.
rinse. drain. cool.
in a large bowl combine noodles, margarine, eggs, sugar, lemon juice, salt and pineapple juice.
in a well-greased 9" square pan, place three rows of three pineapple slices each.
put a maraschino cherry in the center of each slice and sprinkle with brown sugar.
pour noodle mixture over pineapples.
bake on 350 for 40 min.
cool in pan. turn upside down onto serving plate to serve.
(make sure you grease the pan well so it comes out of the pan properly)0
