I'm looking for some receipes to use leftover honey ham. :tongue: Really looking for a low cal ham salad. Need to put this ham to good use soon.

    I dice it (or a little bigger chuncks) then freeze it and use it in omelets or scrambled eggs. I just add it a when the eggs are almost done. The ham usually warms up before the eggs are done.

    I just did the same thing recently with leftover ham from a Christmas Eve dinner. But I froze it to make fried rice instead of omelets. It's not low in carbs, so I just fed it to my family, but I added tofu, eggs, corn, carrots, peas, and onions. I just kept some of that good stuff aside for myself before mixing in the rice.
