    I tweeked them a little and added 2 tbsp. Peanut Butter, an extra banana, used 2 1/2 cups oats, and used 3/4 cup applesauce instead of a real apple. So my calories per cookie were about 68cal. I also only got 25 cookies out of my batch using a tablespoon. They are pretty good, but not a crunchy cookie like my husband likes!

    Does stevia still have that nasty aftertaste when you use it in baking? I can't get myself to put it in tea or coffee, but I love to bake me some cookies...

    I have tried baking oatmeal and if you want less cookie and more cake like, you can add an egg and teaspoon of baking powder. You can also put in nuts, dried cranberries, cinnamon, etc. you get the idea. I like honey instead of sugar or sweetener. Great as a healthier snack.

    I tried these yesterday and I have to say they were not what I was expecting. I think that it would have been better if I used only about 1 1/2 cups of oatmeal. The 2 cups were too much.

    just a thought for those who are thinking of using apple sauce why not use a stewed apple instead. it would be less calories than shop bought apple sauce:smile:

    That's what I was thinking too! For super quick apple sauce I cut up one or two apples peeled, place in a microwave safe bowl and microwave on high for 60 sec intervals until they are really soft. Add a bit of cinnamon, mash with fork..ans Whaalaaa...apple sauce!

    I make this all the time now and call them breakfast cookies, thank you. I use apple sauce, no sweetener and then add in raisins or last time, ginger and apricots. It bumps up the calories a bit, I think with 1/2 cup of raisins, and making them into 25 cookies, they are 47 calories each, but so worth it. I have three or 4 for breakfast on the run. Freeze them too!

    When they first came out of the oven I wasn't impressed because I was thinking cookie, but now I'm addicted to these mouthfuls of chewy yumminess.
