Help! I'm looking for a healthy meal...

My eldest son's GF is coming to dinner next weekend, and I'm stuck for a main dish :ohwell:

Here is my 'menu':
Starter: Salad with french stick
Dessert: Creamy Lime Mousse

Any ideas as to what would go with that?

    I made cornish game hens stuffed with cornbread (stove top) it was easy and fun....
    Tami posted the recipe.

    I threw in potatoes to roast with them.

    Cornish game hens....now aren't you fancy shmancy...... Jackie....this sounds pretty good...or how about a nice roasted chicken? I make one at least once a week

    I do a roast chicken as our Sunday dinner, my son & his gf say spaghetti bolognese, my dh wants toad in the hole! Typical! :laugh:

    Salmon comes to mind. Lots of easy yet tasty recipes. Easy to dress up.
