Flax Meal Muffins

These are a good treat if you're looking for something low carb and not too sweet. They are also grain free!

Apple Flax Seed Muffins

1 1/4 cup flax seed meal (ground flax)
2 tsp baking powder
1 tbsp cinnamon
1 tsp nutmeg
1/2 tsp salt
12 drops liquid Stevia
4 large eggs
1/4 cup olive oil (or coconut oil)
1/2 cup water
1 tbsp vanilla
1 med apple, chopped very finely

Preheat oven to 350. Prepare muffin tins with baking cups, or oil lightly with coconut oil. Mix dry ingredients together, mix wet ingredients together. Combine the two and let sit for 10 minutes. Pour into muffin pan and bake 18 min.

You can substitute any fruit as well - berries, mashed banana, canned pumpkin, dried fruit.

Nutritional Information: Each muffin 124 calories, 6 grams carb, 10 grams fat, 5 grams protein, 1 gram sugar.
