Tuna Melt

I just had a tuna melt inspired by a Healthy College Cookbook I was flipping through. I took an english muffin (I used a Healthy Life Lite 80 calorie muffin) and split it in half and toasted it while warming up the oven. While it was toasting I drained a 5 oz can of tuna packed in water and mixed it with 1.5 Tbs of reduced fat mayo. I divided this between the two muffin halves and sprinkled each one with a Tbs of shredded 2% sharp cheddar cheese and baked until cheese was melted. According to the recipe calculator the whole thing has 330 calories. I can live with that.

I threw in some leftover veggies and rotini/broccoli and there was dinner for 616 calories. I'll be doing the tuna melt again but with different sides. I was doing refrigerator clean out this evening.

    Is it still only 330 calories if we eat like 10 of them? Cuz that sounds absolutely delicious & I want to have many...

    It was a nice change. I spent a lot of the summer grilling out but with the weather changing I'm looking for different foods for dinner and this one is a keeper and it's quick and easy.

    This is so awesome, just had it for dinner! I mixed about 3/4 of a tablespoon of cream cheese in place of the mayo, because I hate the stuff, along with some salt & pepper. And didn't have shredded cheddar so I took a piece of white american and broke it into 4 squares, and used 2 squares on each english muffin half. AWESOME dinner! Great source of protein, super delicious and very filling! I even had enough calories for a glass of wine! Thanks so much for the idea!
