Thai Beef Stew (Calling all Peanut Butter Lovers!!!)

I hated beef stew as a kid and was reluctant to try this receipe but fell in love with it. It sounds weird, but Peanut butter in beef stew is so good. This receipe is compliaments of Men's Health magazine.

9 oz lean sirloin steak (cut into bite size peices)
1/2 package beef stew seasoning mix (I use store brand b/c it's lower in sodium)
16 oz bag of frozen mixed vegatables (carrots, green beans, peas, corn, anything you like)
1 can reduced sodium beef broth
1/3 cup creamy peanut butter (use natural PB)
1 tablespoon olive oil (optiopnal, I use non-stick spray)

Heat pan with non-stick spray or olive oil. Add the sirloin and brown. Once the steak is browned, add the frozen vegtables, beef droth and seasoning mix. Bring to a boil and let the vegtable cook (about 7 to 10 minutes). Add in peanut butter (stir well) and let cook for several minutes. Serve over rice, cous cous or just by itself.
