Grad school dinner help!

This year I am in grad school two nights a week, Mondays and Thursdays. I work on both days until 5:15 and class begins at 6pm. That leaves me 45 minutes to drive to school, find a parking spot and walk across campus to class. Considering it is rush hour, I really need those 45 minutes to drive to class. Classes do not get out until 8:30 and it takes 20-30 minutes to drive back home. So I won't be home until 9pm.
I need some suggestions for some dinners that are healthy and quick that I can eat in my car while driving to class, or light dinner options that I can eat when I get home. I should also add I am a special ed teacher who works in the homes of my students. I do not have access to a stove or microwave to heat up food. Asking the families of my students to use their appliances is completely inappropriate. I am vegetarian. I need foods that can sit in my car for a few hours without spoiling. Also something that is easy to eat while driving to school. Or something light to eat when I get home at 9.
I was thinking of something along the lines of hummus and sliced veggies. Any other suggestions.

Would it be possible to have a dinner at your lunch time in work? Then you could have a sandwich or something in the car?0

Bean salads (be creative---some of my best have been when I just started emptying the pantry into a bowl and added a splash of vinaigrette!), peanut butter and jelly on a high fiber tortilla, greek yogurt with walnuts0

I don't know about specifics, but plan ahead and bring a lunchmate cooler then you can pack whatever you want for dinner. Also I went through the same thing, work + grad school and I just told my professors about my time constraints and they were ok with me eating in class, as long as it wasn't disruptive! So that may be an option. Good luck with school!

I used to pack a lean turkey sandwich for nights i had school and some carrots, celery or cucs0

We have class 1 night a week and we each get a veggie Subway footlong sandwich to eat right after work at 5:30 before class starts at 6:00-8:30-9:00 ish.
I've made dinners in the past usually pasta b/c it warms up well unlike a stirfry for example which would be mushy especially since there are microwaves in some cafeterias on campus. In the end, we love Subway, it's so much easier for me to not have to carry 2 dinners to work along with everything else and with a veggie sub its only 460 calories and 620 mg of sodium, you avoid the extra 600+ mg when you don't have meat and I've found its just as delicious!!
Don't forget to collect your receipt, do the 5 min survey and you get a free cookie. We have class tonight so I'll be doing that asap and giving it to the hubby due to cals0 -

Yes. I am planning on eating a big meal at lunch so I can have something light for dinner in the car. Great minds think alike! :happy:0 -

Thanks! Tonight is my first night of class so I will meet one of my professors. That is a good idea speaking to them before hand about needing to eat in class.0 -
Thanks everyone for the suggestions! I appreciate it. I love Subway veggie sandwiches, though I have to say I think the Quiznos veggie is better just for the guacamole factor alone! I don't know the calorie count on that one though, it's been a long time since I had one! Though Subway may work provided I don't hit traffic and can find a parking spot. There is one right across the street from my school!!!!! :happy:0
