from what i have bben told , when you eat food , your body breaks it down and stuff it cant digest properly it converts to fat and stores it .
, if you eat 75 cals every hour and no more per hour , in a waking day of 16 hours you would consume 1200 cals and non of it woiuld be stored as fat

now my question , what is the max caloires you can consume in a meal before its stored as fat

If you are in a caloric deficit most likely none of the calories you consume will ever be stored as fat, you will actually be taking from your fat stores to make up the caloric shortage.

It also depends on how fast the food breaks down, some food takes minutes while others take hours.

true.. you can eat all of your calories in one meal and lose weight if you are at a deficit. that's what intermittent fasting does. when I was fasting for Ramadan I was eating about 1,000 calories in one meal and lost 4 lbs in one month... it all depends on your calories over your body's metabolic rate.
