Simple Crock Pot Chicken Stew

The idea of a crock pot is to make your life easier. Not much is easier than this stew. Using things you probably have on hand anyways, you spend about 10 to 15 minutes prep time and eat in 7-9 hours. Like most of the soup/chili recipes this is "cooking for two with leftovers". We have a new All-Clad slow cooker from William-Sonoma and I wanted to do something new. If you Google crock pot chicken stew, you get the usual thousands of results. The exact same recipe was on about half the sites. So, if so many are publishing the same recipe, it must be good... right? Well yes it is.
Ingredients
3 skinless boneless chicken breast - about 2 pounds - trimmed and cut into 1 inch cubes
1 large onion - diced
4 carrots, pealed and cut into 1 inch slices
2 celery stalks diced
4-5 potatoes, pealed and cut into 1 inch cubes
8 oz. mushrooms, cleaned and halved-optional
1 cup frozen corn
2 - 14 oz cans chicken broth
1 - 14 oz can diced tomatoes drained if you want a tomato based stew
1 t celery seed
1 t dry thyme
1/2 t black pepper
1 cup frozen peas


Instructions
1) Prepare veggies
2) Clean, trim and then cube chicken
3) Place all ingredients in crock pot except peas
4) Cook on low for 7-9 hours or high for 4-6 hours.
5) Add peas 20-30 minutes prior to end of cooking

Cook time: 8 hour
Total time: 8 hour 30 mins
Yield: 8 servings
